WHere is a simplified take on a cocktail featured on a new menu. Designed as a party-sized premix that's bursting with the essence associated with holiday season, making it excellent for a holiday party. Reserve the remaining syrup you can use for brunch beverages, desserts, or for additional servings of this cocktail.

Makes enough for 10 people
To make the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put all the ingredients in a saucepan, bring to a simmer, mixing to dissolve. Next, turn off the burner and let it to cool completely. Transfer into an sealable bottle, close it and store in the refrigerator, it will last for around four weeks.
Preparing the Premix: Combine the specified liquids into a big jug, allow it to infuse for one hour, then strain , ideally through cheesecloth, to ensure it's fully clarified.
When ready to serve: Measure 85ml of the cocktail base to a cocktail shaker packed with ice, gently stirring carefully for a minute until cold. Strain into a frosted cocktail glass or similar, garnish with a few cranberries and finish using a quick spritz with the mandarin essence above the glass.
